Thanks to everyone for their great ideas!  Some of these I had never thought of.  
Here are the responses:

If you have computers for student use, he could take computer classes at a local 
junior college or adult school.  I got professional growth by attending a 
California State Library Association convention and attending workshops about book 
repair and graphic novels.  He may also try to take online classes.  I just started 
an online course toward a certificate in proficiency in the library at Cuesta 
College, a junior college here in California.  I hope he finds something that will 
interest him.

How about learning how to use media production equipment, multimedia computer 
applications, etc?  Learning about copyright, book talking (especially if he helps 
students find books - we all do the one-minute book talks.)  Suggest that reading a 
book a month that he writes a short book talk (paragraph) on can be counted as PD.

How about certification in first aid and CPR? 

I am currently a library assistant but am required to have 16 hours of PD every 
year.  I am currently working on my Masters in Library Science.  When I first began 
working as a library assistant, I took every technology PD that occurred.  
Technology is becoming a more important part of all libraries.  This training has 
eventually led me to create even our school library web page and to have teachers 
use my skills as they pursue things with their students such as creating brochures 
and this is at the 4th and 5th grade level.  Hope this helps.

How about taking him to your state library conference for a day or to a BER 
workshop on best books for your age group.  He can book talk while checks materials 
in and out! Or how about a book repair workshop?  Seems like the perfect 
opportunity to provide more library education.  

See if you can find a DEMCO demo for repairing books.  I sent my aide and she loved 
it.  We are now repairing books the right way.

You might want to offer him the opportunity take some workshops through the 
Regional Service Center or the "Lifelong Education At the
Desktop" program ( Le@d).   http://www.leadonline.info/New/Courses.cfm
 (scroll down and you'll see some workshops for both public and school 
libraries---both areas may be of interest).

There are some courses in the Le@d program that might relate to what he would be 
doing --- or might be interested in doing--- including:
Keeping Your Library Looking Good
Managing Difficult Patrons
Providing Excellent Customer Service
Using Databases
and there's also workshops that include:  PowerPoint, Word, Publisher, etc.  Most 
of these workshops cost about $20 and the time to complete the workshop may range 
between 1-2 hours....generally an hour will be enough to complete one online 
workshop.

Don't have any listings for your area- but as a suggestion: any type of workshop 
with topics such as dealing with work management, dealing with students, 
discipline, etc. would probably help - also any that are on things like creating 
displays or on lists of new books, etc. that your assistant could then come ba
