A memorable dragon appears in LeGuin's The Earthsea Trilogy (first volume: A Wizard of Earthsea). This series (now actually to 4 volumes) is good for strong readers from 3rd or 4th grade up through high school. Fine fantasy. There's always the dragon Smaug in The Hobbit--more difficult reading but of course a classic.
