Two that come instantly to mind are: How the sun was born written and illustrated by 3rd grade art students at Drexel Elementary School, Tuscon, Arizona published by Willowsip Press. It has both English and Spanish text. Also, Arrow to the sun: a Pueblo Indian tale by Gerald McDermott. Hope this helps.
