AV Club Ideas

I am beginning my first year as a media specialist in a large
middle school.  One of the many tasks I have before me is
founding an AV Club (on the principal's directive).  I have
thought of using this as an opportunity to train students in
camcorder use and video production, however I am stumped on
other ideas.  Do you find this sort of club useful and if so,
what sort of activities/responsibilities do the students have?
How can I make it interesting so students will want to join?
