Curriculum mapping is not the same as collection mapping. Curriculum mapping is a systematic way to document the "real" curriculum of a school. It involves collecting data about units (from teachers, students, even from the library media specialist her/himself), entering the data into a data/file management program, and generating various reports. These reports are the maps. Curriculum mapping nicely complements collection mapping - once you know the curriculum, you can compare the collection to it. RE Inspiration, curriculum mapping works best with a file/database management program. However, I guess you could create graphs of the curriculum using a graphics program.
