Tony,
     What a wonderful opportunity to present information skills as a holistic
process integrated within a thematic unit.  There are a variety of
information skills process models out there and none of them specifically
sets up grade levels.  The emphasis is on the holistic process.  Perhaps you
could encourage the teacher to put students in multi aged small groups who
all have a common project they are working on.  Graphic organizers could be
developed with some variance to reflect different ages (reading skills, past
experience with various resources, etc.).
      I can understand that having a double class in the LMC from teachers
that are team teaching would be a challenge.  Do the teachers help you with
an information-seeking activity?  If not, maybe with a little encouragement
they would be willing to do so.  On the other hand, that is still a large
student-teacher-LMS ration.  As you work with them in the development of a
thematic unit and you all work together as a team, they might begin to see
ways where part of the group remains in the classroom while others cycle into
the LMC.  Are you on a flexible schedule?
