TECH:?Scanner problem

I'm using an Apple Color One scanner with a Mac 580.  For some
reason, it quite frequently flips to black and white images
after prescanning.  I've upped the memory above the recommended
limit, but it doesn't seem to help. I tried scanning a picture
several times this morning, and it worked like a charm.  Then
this afternoon, when I went to use it with a group of kids, it
reverted to its old tricks.  Anyone know of any solutions?
