? H.S. anthology by subject

Our H.S. English Dept. is looking for an anthology of excerpts or passages from
well known works, that deals with objects, colors, etc. as symbols.  For
example, Melville's turtle in the Galapagos in an essay we think is called
"Encantatas", and the turtle in Steinbeck's "Grapes of Wrath".

If you have ideas, please respond to me personally.
