Target: Gingerbread Houses

Friends,
A teacher is doing a project with a special education class on Monday
concerning GRingerbread Houses and she asked me what the connection is
between the houses and Christmas. Is there a story or book or does
someone know the significance.
I appreciate any help that you could give.
