Email server info needed

I am setting up a connection to the internet for our school Macintosh based
LAN/WAN. I have WebStar up and running and am serving a homepage, so I have
a connection to the net in place.

I want to set up and handle email accounts for the kids and staff (about
3500 potential accounts). I plan on using Eudora lite for a client. What is
the best server software to use? Ease of use? Cost? Availability? Where do
I get it?
