Thank you everyone who responded. Here are the responses I received:

There was a poet named Celia Thaxter who was enormously popular in the
late 1800's, thought her poetry has basically disappeared into the mists
of time. She lived on Star Island in the Isles of Shoals off of NH /ME
line, and much of her poetry is about nature. She may have written too
late for you, but worth a try???

Can't think of the correct poets right off the bat, but I think they might
enjoy reading Margaret Haddix' "Running Out of Time" when their pioneer
experiment is over. The story is about a girl whose family is part of a
Living History community gone awry. The developers of the community decided
to cut the community off totally from the modern world for at least a full
generation, so all the children believe that they are really living in the
1800's. When a medical crisis, for which the only cure is modern medicine,
forces one concerned woman to tell her daughter the truth, the child must
then sneak out of the community and into the modern world to summon help.
It would fit right in to their own "return" to the modern world, and makes
a great read-aloud.

You might suggest Robert Service. I know he's from the turn of the
century, but he's one of my favorites.

Try The Victorian Web

Go into Literature, and you will find a timeline. It will
give you an idea of who was writing what.

Presently, we (year 6) are studying the Victorian period in
England. It is proving to be so interesting. At the moment
we are making a Victorian street scene. Two weeks ago we
made a display of Victorian poetry. It looked lovely and lacy!

There was as reprint edition of McGuffy's Readers a few years ago that might
have something of interest for the kids. Widely used throughout the 19th
century.
