Our 9th grade World History class does a similar project.  Some good
books
that I have purchased in the last year are:

American Immigration, 10 v, 0-7172-9283-5 (set) Grolier

Family Alblum series, not sure how many volumes, can purchase
individually;
I have Irish,   Scandinavian, German, Chinese, etc.; Oxford University
Press

Ellis Island Interviews, Peter M. Coan, 0-8160-3414-1, Checkmark Books

Ethnic Dress, Frances Kennett, 0-8160-3136-3, Facts on File

You Eat What You Are, Thelma Barer-Stein, 1-55209-365-4, Firefly Books
