It has been difficult. There is a great historical census site where you can get census data from 1790-1970. You can set it up to just show the information you desire. Slaves are one thing that was counted. http://fisher.lib.virginia.edu/census/ Before 1790 (the first US census) there is little consistant information. There are various narratives containing the information but no charts that I have found yet.
