A little neck is a very small quahog, tender enough to be eaten raw, on the half shell. This assumes that you know what a quahog is, but just in case: a quaghog is a hard-shelled, round clam, used in chowder (or "chowdah"). The native Americans of the NE coast used the shells to make wampum; since there is more white inside the shell than purple, the purple beads were worth more, if my memory of my 9th grade research project is correct. Up in New England, we use soft=shelled clams for fried clams (bellies and all -- yummm) and the hard-shelled quahogs and surf clams for chowder. If you try to get fried clams away from the coast, you are getting only clam strips --usually sliced surf clams, which are large and tough . Real native fried clams are tender and sweet and juicy.
