Saves you heaps of time, has meaning and purpose and context for them, and keeps them engaged with the activity especially if you tell them that their work will be on the website, displayed or whatever for others to use. When you decide the final format, let them produce the best they can, You just set the task, and sit back and let them learn, helping where you are directly needed. Caters for all levels then - those who know don't get bored, those who don't get support.
