    We too faced this problem, and think we have found a great solution.
One of the things we have done that has received raves from our volunteers
is giving gift jars of cookie or soup mixes.  There are recipes for these
available in many books and magazines, and they can be made very attractive.
Last Christmas we gave quart jars that were filled in layers of flour,
oatmeal, brown sugar, regular sugar, and chocolate chips, and were decorated
with red and green ribbons.  Included on a decorative card was a recipe with
instructions for adding the few remaining ingredients that were needed to
produce the cookies, and cooking instructions.  They looked very festive,
and our moms raved about the ease of making holiday cookies, with the
pre-made mixes.  The cost to us was minimal, and the fact that we made up
the jars ourselves made them more meaningful than something purchased from a
store.  I think if you try them, you'll be surprised how much they are
appreciated.  We plan on making this gift a yearly event, and are collecting
recipes to try out in advance to make sure they work.  (The chocolate chip
cookie recipe we used was delicious!)  Hope this idea helps!
