Health food stores carry nut butters other than peanut butter-- almond 
butter, cashew butter, etc.
which are extremely good with jam on special breads.  I think the nut 
butters on bread give you sustained energy that doesn't burn away fast and 
leave you hungry.
Another trick is to blend tofu (silken works well) with regular peanut 
butter-- it may not sound good, but the taste isn't any different really 
than the peanut butter, and the texture is nice, fluffy, and whipped.
Fruit is always a good thing-- when I was trying to increase my intake of 
fruit, I found that if I took it and left it sitting on my desk where I can 
see it, I would eat the fruit instead of vending machine stuff (since it's 
right there).
I also recently made my best librarian purchase of my life, which is an 
instant hot water/teapot (I have no idea what they're really called) from 
Target.  When you want boiling water, you just push a lever down and it 
boils within a few minutes.  I drink hot green tea every day (caffeine 
addict!!!) but it works really well for instant oatmeal-- the oatmeal is 
fantastic when I remember to bring berries or bananas to put in.  I have 
also tried dried apricots, cherries, etc.  but fresh is better.
When I eat lunch at work, I usually have the goal of eating as much fruit as 
I can, and keeping it as healthy as I can (so that I can splurge on dinner 
and not feel guilty), and also going for the protein/carbs/fiber that really 
DO keep me going all day.  Salad alone doesn't cut it for me, and if I get 
hungry, I go to the vending machine...  the green tea helps alot.
I also bring a big nalgene bottle of water every day.
