I have to agree with Peter, a good bowl of hot soup is hard to beat at lunch! I also like to bring beef stew. I just follow the recipe on the back of the McCormick beef stew packet and I've got lunch for several days. I appreciate the suggestions of this thread. Lunches can get so routine. Thanks for starting this thread, Lisa, My favorite is leftover soup and whole grain bread, along with some raw carrots and apples. On weekends, especially during the winter, I usually make a big kettle of soup from scratch, using various varieties of dried beans (pinto, garbanzo, navy, small red, kidney, adzuki, black, etc.) and seasonal vegetables from our Farmers' Market. I love to take a thermos full, and also enjoy some whole wheat bread from our local baker. The carrots are often consumed mid-morning break. I hope we hear from many members about their healthy bag lunches, so that we will all be inspired to be healthy during 2006!
