I have to throw in some of my favorites: There are many variations on the Cinderella theme - Cinder Edna is one of my favorites. You can also almost do a whole unit on the Three Little Pigs, using books by John Sczieska, Eugene Trivizas, James Marshall, David Wiesner's Caldecott winner, and many more. Mike Thaler and Jared Lee, creators of the Black Lagoon books, also have a series of fractured fairy tales called "Happily Ever Laughter." They may be out of print, but if nothing else your public library may have them. Gail Carson Levine's "The Princess Tales" books are short chapter books. They could be read-alouds over a few sessions or just available for students to read if they've liked the picture books used in the unit. Vivian Vande Velde's "The Rumpelstiltskin Problem" has six different variations on the theme.
