I would add to Keith's query.  Which have you used with students, how, and what 
general grade levels?
 
I have used podcasting (from Audacity) to record Mother Goose rhymes and raps with 
4th graders
I have used blogs and wikis with 5th and 6th for book reviews, writing from a 
prompt, and social studies information.
 
I would love to see other ideas to try.

You will get a lot of people who cannot pick just one. I know I cannot. I
did a similar survey last month and the results are at my blog if you want

The two entries with must-have in the titles are the most directly
connected. What I did learn was that most people will say one or another
blog resource and then say that is about all they have had time/access to
explore. For myself, I might say Twitter because it is a bit new to me. But
naming one is hard. I also have an upcoming presention on this topic. It is
at my wiki and is the one called "Free For All" though several presenations
there are about web 2.0. Here is the wiki address:
