I've gotten a couple of good suggestions so far, but neglected to mention that the teacher recalls it being a chapter book. Not sure for what age/reading level it was intended, but it was definitely something she read with her parents in the 80s (or even early 90s). It was likely published between the 70s and 80s, though.
