I received information from various sources about this question, and I found
out that the best free recording software for skype sessions (as well as
podcasts) is audacity, because there is no time limit:

I found a couple of other links that list other sources of software, but
most of these have both a free version and a pay version, and the free
versions have limits on the recording time (usually 15 minutes), which is an
issue for recording a conference call or a session that lasts a whole class

The one problem with audacity is that it only records audio, so if someone
has recommendations for video skype recording, please contact me! I am
setting up a school-to-school debate between two biology classes and would
like to record both audio and video, if possible.
