preheat oven to 450*
 
6-7 lb pork butt
1 lb brown sugar
salt and pepper
 
line a baking pan with foil and place a cooling rack (wire ) over it
take pork butt out of refrigerator 30 minutes prior to cooking so it can come up to 
room temp
 
liberally salt and pepper all sides of the butt
take brown sugar and PACK it onto all sides of the pork butt encasing it as 
completely as possible
 
put the butt on the wire rack fat side up and then put the pan into the the oven 
cook for 30 minutes at 450* and then turn the oven to 275* for 8 hours.  Just leave 
it there.
 
after 8 hours remove from oven and let rest 30 minutes place in a very large pan or 
bowl and using 2 forks (or your hand if you can stand the heat) pull the pork apart 
into small pieces.  
 
serve on potato rolls, bbq sauce and coleslaw for topping.  Great sandwiches - low 
cost - minimum work!
 
My vegetarian sister couldn't stop herself from having a piece.
