Have you considered a multi genre research paper?  The idea comes from
educator Tom Romano.  Students do traditional research but then present
their findings through various genres of writing.  Maybe, for example,
they'll include one short story, one sonnet, a fictionalized recipe, and a
series of haikus.

For a poetry paper they could study a particular poet then report on them
using several styles of poetry.  Other variations on this idea would be
possible.  A quick google search turned up some examples.
