     Since I never imagined that the number of requests for Wassail recipes
would be so high, I hadn't intended to post this as a Hit.  However, it's
become the easiest way for me to respond, so I hope the rest of you will
bear with me.
     To those of you interested in going "wassailing," please accept my
apologies for not getting back to you until now.  With all our severe
weatherin Harrisburg (blizzard, heavy rain, ice, flooding) and all our days
of no school, I haven't had much time.  Anyway, save these for next holiday
season, and enjoy!
     Here is a sampling of some of the wassail recipes...

Wassail - 4 servings
1 lemon
1 apple
12 cloves
1 and one half cups ale
1 and one half cups sherry
3 T. sugar
1 tsp. minced fresh ginger
one eighth tsp. ground nutmeg
Cut the zest from the lemon in thin strips.  Squeeze the juice from half the
lemon.  Cut 4 slices from the apple and stick 3 cloves into each.  Put the
ale in a microwavable bowl.  Microwave, uncovered, on high until hot but not
boiling, 6 or 7 min.  Stran.  Serve hot with an apple slice in each cup.

Granny's Recipe
Core and bake a dozen apples.
1 cup water, 4 cups sugar, 1 T. nutmeg, 2 tsp. ginger, one half tsp. mace, 6
whole cloves, 6 allspice berries and 1 stick of cinnamon is put into a
saucepan and boiled for 5 min.
Beat 1 dozen egg whites until stiff but not dry.
Beat the yolks separately.
Fold whites into yolks in large bowl.  Strain sugar and spice mixture into
eggs quickly.
In separate pan, bring nearly toboil 4 bottles of sherry or Madiera and 2
cups of brandy.
Add hot wine to spice and egg mixture and stir briskly.  Add brandy and
baked apples just before serving.

Wassail
2 32 oz. bottles cranberry juice cocktail
3 12 oz. cans frozen orange juice concentrate, thawed and undiluted
4 and one half cups water
3 T. sugar
2 tsp. ground cinnamon
1 25.4 oz. bottle sauterne wine
orange slices
whole cloves
Combine first 5 ingredients in a large Dutch oven; simmer 30 min.  Stir in
sauterne.  Pour wassail into a heat-proof punch bowl.  Float clove-studded
orange slices in punch, if desired.  Yield: 5 qts.

Wassail 2
whole cloves
6 oranges
1 gallon apple cider
one third cup sugar
1 cup. lemon juice
10 2in. sticks of cinnamon
2 cups vodka
one fourth cup brandy
Insert cloves in oranges about one half inch apart.  Place oranges in a
15x10x1 in. jellyroll pan; bake at 350 degrees for 30 min.  Combine apple
cider and sugar in a large Dutch oven; cook over medium heat until mixture
simmers.  Add lemon jiuce, cinnamon sticks, and oranges; cover and cook over
low heat 30 min.  Add vodka and brandy; stir well.  Serve warm  Yield: 4 and
one hal qts.

Wassail 3
Combine and heat thoroughly in something large:
2 qts. apple cider
one half cup brown sugar
one third cup frozen lemonade
one third cup frozen orange juice
Add 6 cinnamon sticks, 3 whole cloves, 3 whole allspice, 1 and one fourth
tsp. ground nutmeg.  Bring to boil, cover, simmer 20 min.  Remove whole
spices.  Add 2 fifths dry sherry.  Float orange slices studded with cloves
on top and serve warm.
