Literature class--outdoor theme

Need ideas. One of my teachers is offering a literature appreciation class
to juniors and seniors next year for one semester. The students met before
school ended this year and chose stick to the theme of literature about the
outdoors. I am looking for suggestions of short stories, poetry, mythology,
novels, nonfiction books or anything else you can think of that might perk
the interests of our hunters, campers, hikers and outdoor sports
enthusiasts.
