Actually, what you can do depends, to a large degree, on what your
email program will allow. Some programs will only put the complete
message on the top and you must reply under it. Some will put your
reply on the top and put the complete message on the bottom. Others
will let you put your responses anywhere in the reply. However, most
programs that use a sig, will always put that sig at the bottom of
the message. (Which why I don't use one, but type each one out). I use
Pegasus, which will let me put my response anywhere in the message,
or even not include the original at all.

I've found that it's easier to live with what I get, rather than
worrying about it.
