Irish potato recipe

One of my teachers has been searching, with no success, for a recipe for
Irish potatoes, a coconut candy-like ball about the size of a malted
milk ball. I saw them at a candy stand at the Philadelphia Flower Show,
but the clerk had no clue as to how they were made. Might someone in
LibraryLand be able to help?  Thanks.
