The childhood fantasy book you are looking for is _David and the
Phoenix_ by Edward Ormondroyd.  It is a favorite of many "baby boomer"
age folks, as it was a Weekly Reader Children's Book Club Selection in
1958.  It is almost impossible to find anywhere---I finally got one in
an auction on eBay!
