Thanks to all who sent me the answer; it only took three minutes to have it! The books are by Fred Gwynne. (aka Herman Munster) The King Who Rained. Chocolate Moose for Dinner. A Little Pigeon Toad. Sixteen-Hand Horse. I was able to get one of them at the public library. The teacher plans to have the children write their own similar stories.
