Hello,

That sounds like such a great project and great ideas to go with it.  I
have had older students choose a book they liked a great deal as a child
and then change the book/story in some way.

They could change ending, turn it into a satire, change a few
characters, or change the point-of-view.  Having them create or change
just one of those elements can be a strong teaching tool.  Point-of-view
has always been a great option and reading them a book like The True
Story of the 3 Little Pigs by Scieszka can show them a funny example.
