Dear Librarians, Can anyone direct me to where to find the "real" history of potato candy? I have seen or heard Irish Potato Candy, Amish Potato Candy, Poor Man's Candy, Flitch, etc. I also found 127 recipes for potato candy at Cooks.com. Our consumer science dept. is doing a unit on regional foods and their history/origin.
