From my understanding, they can go live without a formal letter from Lucas
Film. As long as they put that standard acknowledgement (which you copied
in your email) that the images are not theirs and it is not for profit,
but education and fan use, they are well within the law. 

Star Wars fans have been doing this for years (theforce.net is a great
example). As long as your students are not taking liberties with those
images, they are fine.

And as a Star Wars fan, please have them go live, I'd love to see their
project!  : )
