I will check this suggestion out when I get a rare moment to myself
(probably at the start of spring!)
I really thought the setting was Earth's moon!

This actually sounds like parts of a few stories, but it brings to mind
one 
of Ray Bradbury's short stories: "Dark They Were and Golden Eyed." It was
in 
a literature anthology that I used back in the late '70's when I was 
teaching English. It was one of my favorite short stories, but I have had
a 
difficult time locating it again. Hope this helps.

Read in the late 70's or early 80's:

A man and his family relocate to the moon in time of peace. The man was
uneasy with this decision but since there were shuttles/rockets being
launched all of the time, he figured he could always hitch a ride back at
a whims notice. The colonists grow food and produce other products for
consumption. The man refuses to eat any 'moon' food. WWIII starts on Earth
and no more shuttles come to the moon. The man starts to see changes in
the colonist's eyes. He consumes all of the Earth food, he is relegated to
eat 'moon' food. Years/decades later a shuttle reaches the moon and
reports of 'friendly beings' inhabiting the satellite.
