Great Holiday cookie recipe-can easily be multiplied for cookie exchanges! Golly Polly's Doodles Recipe By : Serving Size : 17 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Cookie: 1 1/2 cups flour 1/2 cup unsweetened cocoa powder 1/2 teaspoon baking powder 1/2 teaspoon salt 8 tablespoons unsalted butter -- (1 stick) cut into 1-tablespoon pieces, room temperature 1/2 cup granulated sugar 1/4 cup creamy peanut butter 1 large egg 1 teaspoon vanilla extract Filling: 1/4 cup creamy peanut butter 1/4 cup powdered sugar For Rolling: 1/4 cup granulated sugar Preheat oven to 375 degrees. Line baking sheet with parchment or wax paper. To make Doodle dough: Sift flour, cocoa, baking powder and salt onto a large piece of parchment or wax paper. In mixer bowl, using paddle attachment, mix butter, ? cup of the granulated sugar and ? cup of the peanut butter on low speed 1 minute, then on medium 1 minute more. Scrape side of bowl and paddle and mix on medium-high 1 minute. Scrape down again. Add egg and vanilla and beat on medium 30 seconds; scrape down again once they have been incorporated. With mixer on low, gradually add dry ingredients; mix until blended, about 30 seconds. Remove bowl from mixer; use hands or rubber spatula to finish mixing ingredients until fully combined. Chill dough in refrigerator - but no longer than 20 minutes. Make Doodle filling: In clean mixer bowl fitted with paddle, place remaining ? cup peanut butter and the powdered sugar. Mix on low 20 seconds, then beat on medium 10 seconds. Remove bowl from mixer and use rubber spatula to finish mixing until ingredients are thoroughly combined. Portion 17 level teaspoons of the filling onto a piece of parchment or wax paper. Roll each portion into a smooth, round ball. Using 1 heaping tablespoon, portion 17 pieces of dough. Roll each into a smooth round ball, then flatten in the palm of your hand into a 3-inch-diameter circle. Using your thumb, make a small indentation in center of dough. Place a filling ball in the indentation, then fold dough around filling and roll it into a smooth, round ball. Roll balls in remaining ? cup granulated sugar to lightly coat. Place Doodles on prepared baking sheet about 1 inch apart widthwise and 2 inches apart lengthwise. Bake on center rack of the preheated oven 6 minutes (that's right - just 6 minutes), until barely firm. (Overbaking will cause these cookies to become hard.) Remove from oven and transfer to wire rack to cool to room temperature. Store in a tightly sealed plastic container. -- Ann Mansfield, Nat'l Bd.
