Apple Glazed Pork Kabobs 1 cup apply jelly 2 T. honey 2 T. lemon juice 2 T. unsalted butter 1 t. cinnamon ¼ t. ground cloves 1 pound pork loin, cut into 1 inch cubes 1 T. garlic salt 2 t. celery salt 1 t. pepper 1 large onion, cut into 1 inch pieces 2 large green bell peppers, cut into 1 inch pieces (optional) pineapple, tomatoes, and mushrooms, cut into 1 inch pieces ½ c. olive oil Soak 6 bamboo skewers in water in shallow dish. Combine apple jelly, honey, lemon juice, butter, cinnamon, and cloves in saucepan; mix well. Cook over medium heat until jelly melts, stirring frequently; reduce heat. Simmer until of glaze consistency, stirring frequently. Sprinkle pork with garlic salt, celery salt, and pepper. Thread pork, onion, green peppers, and any optional additions alternately onto bamboo skewers. Place skewers in non-reactive shallow dish. Pour olive oil over kabobs, turning to coat. Grill over medium hot coals for 12 to 15 minutes or until pork is cooked through and vegetables are tender, turning and basting with apple glaze frequently. Marcy V.
