When we are boiling chicken for the dressing, we often boil some
extra for this quick & delicious day-after-Thanksgiving meal!!!

Grandma Prince's Chicken Salad
Boil 1 chicken (or 4 lg chicken breasts) in salted water
Allow to cool & tear into pieces or chop finely
Add to chicken & mix well: (adjust amounts to taste)
1c celery, finely chopped
4-6 boiled eggs, chopped/mashed
3 or 4 green onions, chopped (optional)
1/2-1 c chopped pecans
salt, pepper, celery salt
squeeze of lemon
mayonnaise (enough to stir it together and make it smooth)
Serve on bread, toast, crackers... YUM!!!!!!!!!!!!!!
