SEC: Target: Multicultural fair

Greetings..our principal is trying to create a multicultural fair,
having the different clubs at the HS take on the identity of a country.
There seems to be a 3-fold focus...food, entertainment, realia...
Has any one held such a fair in their school (HS or maybe Jr. High) who
would be willing to share guidelines or experiences.  We'd be grateful.
