David MacAulay has wonderful books on the building of the pyramids and a castle. Others include a cathedral, and a skyscraper. The two you would want are _Pyramid_ and _Castle_. Both include pen and ink drawings that show the process, tools, and materials involved in the building. Reasonably well done videos are also available from PBS that use his art work as well. The series is among my favorites for interesting browsing. Lots of pictures to illustrate the parts of the text that are made more understandable by having the tools drawn, rather than just described.
