We do several things here.
-- Periodically, we have a used book sale. Books sell for 25 cents
apiece.
-- I always give teachers first dibs on discarded materials.
-- Once, we let staff from another school, which had no books, pick
through and take whatever they thought they could use.
-- This year, we were contacted by a prison program that needed books
for incarcerated parents to read aloud to their children. They took it
all away in one swoop!

*Of course, I pitched anything that was truly offensive, misleading, or
just plain wrong. We are able to recycle the paper pages. Covers go
into the regular trash.
