Actually you can make these for anything - vanilla cream filling, custard,ice cream 
-  or if you don't add sugar and spices to dough, you can fill them with cheese 
mixtures, or chicken or - whatever!!
It sounds hard - but these are the easiest things to make.

1/2 cup ( 2 sticks) butter - (do not use margarine or oil based spreads)
1 cup water
1/4 tsp. salt
1 cup flour
4 eggs 

 
Preheat the oven to 400 degrees. Have ready a cookie sheet - preferably covered 
with parchment paper to ease cleanup. Bring water and salt to boil on high heat -  
reduce heat to medium and melt butter - then dump in the flour and stir until it 
starts to pull away from the pan. Remove from heat and stir in the eggs one at a 
time. 
Drop by tablespoons for small puffs or you can make larger ones, or make them long 
like éclairs.  You can even spread the dough in a large circle and use it as a 
bottom crust.
Bake at 400 degrees for 15 minutes - DO NOT OPEN THE OVEN DOOR.     Turn heat down 
to 350 degrees for another 30 minutes. Puffs should be golden brown and light and 
puffy.

Remove to cooling racks. When completely cool you can cut the tops off and add the 
fillings.  

For dessert ones I add a tsp  of sugar to the flour before adding it- then you can 
be creative in your fillings. You can drizzle melted chocolate over the tops or 
dust with powdered sugar or cinnamon and sugar.  This year I am going to add 
cinnamon and sugar to the dough, bake some pumpkin pie filling let it cool use it 
to fill some of the shells. 

Have fun- once you have made these you will do it often for lots of things... makes 
great finger food.
