Your arguments for E is for Everybody can also be supported by the fact that
even teachers in high school use children's picture books as springboards to
discussion, to illustrate elements of style, as examples of styles of art,
and for many other uses.  Stereotyping a book as "easy" is shortchanging the
library/school's many uses for picture books in education.

While I think that the E on the spines of books is a great idea, rather than
using the term "EASY" books, perhaps using the term "EVERYBODY" books would
be better, especially for those struggling readers who must read these books
a bit longer than their peers.
Rather than "labeling" the student as an "easy book reader" it might be less
embarrassing to use the term "EVERYBODY" so that when the student carries
the book outside of the library it isn't an immediate indication to others
that the student is a struggling reader.

When students see a wide variety of age groups selecting from the "easy
books" section (my personal favorite in the elementary library), they share
their enjoyment of the book with one another without a second
thought...which is just as it should be.

Just a thought.
