I don't think you are overreacting either....I have
been an English teacher (7-12) for most of 23 years
and a Librarian...I have had several student teachers.
Although they have been prepared with "teaching ideas"
their breadth of knowledge as far as literature is
concerned is lacking.  Why is it that Colleges of
Education and Colleges of Arts and Sciences cannot or
do not (forgive my generalizing here) emphasize
"knowledge of content" to be taught? I could go on
but...:-)    
    You are no alone in your thoughts on this....
